Waffles

SAMSUNG CAMERA PICTURES
These waffles are so easy to whip up and they taste especially good when served warm. My husband likes his with maple syrup. I like mine drizzled with Nutella and topped with fresh strawberries! When I am feeling extra healthy, I substitute whole wheat flour for all-purpose flour.

These cookies are sweet, soft, and slightly chewy and super easy to make! I prefer this recipe over its competition because it does not use shortening.

Vegetarian Chili

SAMSUNG CAMERA PICTURES
Having married a vegetarian, I am always on the look out for chili recipes that both of us would enjoy. I tried “Grandma’s Slow Cooker Vegetarian Chili” and “Meatiest Vegetarian Chili From Your Slow Cooker” and while he liked it, I did not. It just tasted like not-so-yummy vegetarian substitutes…that is, until I found this winner! When I first made this, we both had multiple helpings and it is now in our regular dinner rotation!

Black Bean and Corn Salad

Black Bean and Corn Salad
When I think of a delicious chilled summer salad, I think of this recipe.  It’s a refreshing combination of crunchy, juicy, and healthy.  It originates from allrecipes.com’s Black Bean and Corn Salad II and I modified it based the reviewers’ comments.  One of my most requested recipes of all time!

Butterscotch Pecan Scones

Butterscotch Pecan Scones
I recently went to a local tea room and ordered their famous butterscotch pecan scone. I loved it so much I had to recreate it at home. I looked for a recipe that did not use shortening or sour cream and found this one. These scones were perfectly delicious! They are best enjoyed with clotted cream (Trader Joe’s has it!), jam (strawberry, raspberry, etc.), and a cozy cup of tea.

This recipe (minus the butterscotch chips and pecans) has earned 4.6/5 stars with over 600 reviews. Read more ›

Sun-dried Tomato Pesto Pasta

Sun-dried Tomato Pesto Pasta
My husband loves sun-dried tomatoes.  After I made this, he felt no other sun-dried tomato recipes could compare and requested it again and again (and this is from the guy who rarely has a dinner preference).  I’m not a huge fan of sun-dried tomatoes but I think this dish is a-m-a-z-i-n-g!  It’s super easy and full of flavor.  An excellent choice for potlucks or large dinner parties!

Sweet Restaurant Slaw

Sweet Restaurant Slaw
If you like a good coleslaw, this is probably the best one out there. We are not coleslaw fans but every time my husband makes this, he receives rave reviews about it. It is so easy to make and it is great for big groups!

Mom’s Zucchini Bread

Mom's Zucchini Bread
This is an extra special bread in our family because it was one of the key elements in my sister and her fiancé’s dating story. Instead of grating the zucchini, I like to divide it into six long parts and then thinly slice it. My husband loves seeing vegetables in his food so doing it this way makes him think it is healthier for him!

Chicken, Cheese Tortellini, and Lentil Soup

Chicken, Cheese Tortellini, and Lentil Soup
My friend made this for lunch one day. I loved it so much I (embarrassingly) had three bowls of it! I’ve made it a few times since and I especially like how it freezes well for future meals. It is originally a slow cooker recipe but you can adapt it for the stove top too.
